Summer Recipe Blog

Our most recent modelling shoot was all about cashmere being a great choice for summer. Our cashmere wraps are great for summer evenings and for travelling too as they can be used as a shawl, scarf or lap blanket (they are also on offer this week with 15% off using the code: SUMMER-WRAP-15).

We decided to have a little open-air picnic and when we saw how lovely the photos were Lucy, our photographer, suggested starting a recipe collection. So, here's the first instalment...

Melon Liliana

Sent by Ro and named after a much-loved Portuguese old house we had in the hills.
Take small, round, white, sweet melons and cut in half.  Remove pips.
Cut a small slice at the base so that each half can sit on a plate.
In a bowl mix the following: (according to how many you are making)
2 tbs light mayo
2 tbs greek yoghurt
1 tsp clear honey
Lemon juice to taste
Sprinkle ground black pepper
Add to this some prawns or small chopped pieces of chicken breast (whichever you fancy, my choice prawns!).  Sometimes I add a few white grapes, halved. 
The filling should be chilled.
Fill centre of melon(s) and pop one or two mint leaves on top.
Serve. On a hot day, bliss!

Bulgar wheat
Spring onion
Salt and pepper
Chop all the ingredients finely, mix and dress with lots of olive oil.
Great with lamb (change the herbs if using marinade with other types of meat}. 

Summer dessert

Whisk mascarpone with a few drops of vanilla essence.
Thinly slice a tin of mango halves.
Put some mascarpone onto a meringue nest.
Arrange some mango slices over top and finish with seeds from half a kiwi fruit.
Alfresco recipe

Barbecued halloumi cheese, cherry tomatoes, button mushrooms, mixed pepper skewers that have been tossed in a thyme, lemon & honey dressing:
1 tbsp fresh thyme leaves
1 tbsp clear honey
Freshly grated zest and juice of 1 lemon
4 tbsp olive oil
Salt & pepper
Served with a salad and a glass of fizz! It's best to barbecue the peppers separately as they need a longer cooking time to soften.

Cheddar cheese and small pickle sandwich on medium wholemeal bread.
“This is wonderful when I've been really busy”.
Boiled egg sandwich.  “Yummy!”
Both go with copious cups of tea ...

We'd love to add more recipes so please do email if you have any easy, summery favourites. I'm particularly keen on recipes which are well suited to camping so anything in that theme would be amazing.

I'm off to hunt out a couscous recipe to go with the photo below and may well think of something for the strawberries too. Happy cooking!

Looking forward to trying these recipes when we eventually get some warm, sunny weather! Just to clarify, in my barbecued halloumi cheese recipe all the ingredients need to be tossed in the thyme, lemon & honey dressing & not just the mixed peppers! Happy cooking everyone! :)

I love those recipes, thanks so much, especially the cheese sarnies. Hehe..I’ll give the others a try, they look so very easy for me. My friend makes the most wonderful banana bread with the mushiest bananas, so I’ll get the recipe from her if you would like it…
